ONION JAM RECIPE
5 Large Red Onions
1-2 Tbsp Olive Oil
Salt & Pepper to Taste
1 Cup White sugar
¼ Cup Balsamic Vinegar
Thinly slice your red onions and heat your oil over medium-low heat in a large, heavy-bottomed pot.
Sautee onions in oil, and season with salt and pepper. On low heat, slowly cook your onions until caramelized. Caramelizing can take 30 minutes to 1 hour.
Once caramelized, add your sugar. Cook until sticky, then deglaze with your pilsner.
Simmer your onion jam until most of the liquid is gone, reducing the mixture to a jam consistency.
Once you reach your desired consistency, take the jam off the heat, and finish with balsamic vinegar.
Let sit to cool, and enjoy!
